ABSTRACT

As hortaliças comercializadas e consumidas cruas são meio de transmissão de parasitas intestinais no Brasil. A pesquisa avaliou a presença de vermes nas hortaliças agrião, alface e couve, comercializadas em feiras livres e supermercados no município de São Mateus, ES. As hortaliças in natura foram lavadas com água destilada e esta submetida a sedimentação por 24 horas. Ao final, os sedimentos foram analisados e 31,9% das amostras apresentaram enteroparasitas, principalmente cistos e trofozoítos de Entamoeba histolytica, cistos de Giardia lamblia, larvas de Strongyloides stercoralis e ovos de Ascaris spp, Ancylostoma spp e de Trichuris spp. Entre os possíveis fatores de contaminação estão água de irrigação, esterco de boi e de galinha e falta de higiene, que ocorre em todas as etapas de manipulação das hortaliças.


Vegetables which are marketed and consumed raw can transmit intestinal parasites in Brazil. The research evaluated the presence of worms in cress, lettuce and cabbage sold in street markets and supermarkets, in São Mateus, ES. The vegetables in natura were washed with distilled water, which was submitted to sedimentation during 24 hours. Then, the sediments were analyzed and 31.9% of the samples presented enteroparasites, mainly cysts and trophozoites of Entamoeba histolytica, cysts of Giardia lamblia, larvae of Strongyloides stercoralis, and eggs of Ascaris spp, Ancylostoma spp and Trichuris spp. Irrigation water, cow and hen dung and lack of hygiene are some of the factors for the contamination which occurs in all the stages of vegetable manipulation.
